› please book by phone 2 days in advance, directly with the Restaurant d’alpage de Tovassière (tovassiere.ch)
› payment in cash only (please bring exact amount) directly on site.
There are two alternatives:
– 1. making cheese and visiting the cellar
– 2. cheese making, cellar tour and tasting
We advise you to come at 07:45 to follow all stages.
At around 07:45, the curds are removed, a key stage in the cheese-making process, as this is where the cheese grains come from. The grains are then heated until they reach the desired texture. During this waiting time, we take the opportunity to show the cheese cellar. At around 9:00, the cheese is taken out of the moulds and put into the moulds, before being tasted.
